Copied the files over from a Windows install (that can see the game) to a 1200, running SCUMMVM 2.5.1 (most recent 68k) but it is not seeing the game, even when pointed to the same location.

It is NOT included. Is it something that can just be added, or does it need to be compiled?

An engine needs to be included during compilation, so this can't be done without recompilation. IIRC the engine is pretty "heavy", so that's probably why it wasn't included in the build.

AFAIK we only provide the version for OS4, did you get this version from Aminet?

I seem to remember the Ultima engine may not be included in the 68k version because it added too much to the executable size, but to confirm could you run
./scummvm --list-enginesand check thatultimais in the list?
